Extremely rare and coveted, Philippine Alamid Kopi Luwak coffee is produced by civets, a relative of the mongoose, who have a taste for the sweet, red coffee cherries that contain the beans. The beans pass through the civet after fermenting in the stomach and that's what gives the coffee its unique taste and aroma. Collected from the jungle floor, then thoroughly washed and dried - this is the coffee that everyone's been talking about. With earthy Sumatra-like tones, the Philippine Alamid Kopi Luwak has a heavy, caramel body and low acidity, but also a nuance in the taste that is hard to put the finger on. Perhaps that is unsurprising given the unorthodox method of processing.
